Barley reacts against toxins in the body and stimulates digestion. It is also known to have a cooling on fevers, and for those who have genetically high cholesterol levels, barley is a must in the diet. Barley is rich in Vitamin B and minerals.
Ingredients diced onion
30 g carrots
30 g celeriac
30 g celery
30 g diced potatoes
100 g smokey bacon
100 g pearl barley
2 litres of meat stock or 2 litres of water with 2 stock cubes
a little butter
1 bay leaf
Preparation
Gently fry the onion in the butter until golden brown, then add the vegetables and the barley and leave to fry gently for a few minutes. Pour on the stock, add the bay leaf and leave to simmer for 1 hour. Chop the bacon and add it, together with the diced potato, to the pan and simmer for a further 20 minutes. Season with salt and pepper and serve with chopped chives.
