Beetroot dumplings with horse-radish sauce

As a result of its high Vitamin B, calcium, iron and especially folic acid content, beetroot is considered a particularly healthy vegetable and can be used, among other things, for salads and side-dishes. If you get a red dumpling on your place whilst here, it is sure to be made with beetroot.
Ingredients for 6 people
Dumplings: 300 g. of one-day old white bread
100 g. of cooked beetroot
1 onion, 2 eggs
2 desert-spoons of flour
¼ l. of milk, salt
Horse-radish sauce:
1 desert-spoon of horse-radish
2 desert-spoons of butter, 2 desert-spoons of flour
1 cup of meat stock, 1 cup of whipping cream
A pint of sugar, salt and pepper
Preparation
Dumplings: Dice up the bread and add the finely-chopped beetroot, fried onion, milk and salt. Leave aside for 10 minutes. Form dumplings and cook for 20 minutes in boiling, salty water.
Horse-radish sauce: Melt the butter in a saucepan and add the flour. Mix together add slowly add the stock. Finally add the horse-radish, fresh cream, sugar, slat and pepper. Leave to simmer for a few minutes.
