All sorts of good things thrive in the mild climate of South Tyrol, with cattle and other livestock all feeling at home on the lush Alpine meadows. The Vitalpina Hotels too are happy to make use of this abundance, mostly sourcing the ingredients for their Vital cuisine from the region. Many even grow their own fruit, vegetables and cereals or farm their own animals.

Their motto is the shorter the distance, the better. This philosophy means that we all benefit. The environment is safeguarded thanks to shorter delivery distances, local production is supported and, as a guest, you know just what you are eating. Regionality is close to the heart of the Vitalpina Hotels, with the Gerstl in Mals sourcing its supplies from within a radius of just 30 km.

The Drumlerhof in the Dolomites keeps the winter months tomato-free as, in addition to regionality, seasonality also plays an important role. The kitchen staff at the Vitalpina Hotels strive to attune their dishes to the seasons, ensuring that guests can always enjoy a variety of dishes on holiday.

Produce that is cooked fresh from local farms is both especially tasty and highly nutritious. The Vitalpina Hotels thus live up to another of their values, namely healthy eating.

As the quality of the ingredients is not the be-all and end-all, however, many of the Vitalpina Hotels also offer tasty homemade products, such as freshly baked bread, delicious jams or cheese made on the premises.

We would now like to briefly present three classic regional specialities. You are sure to encounter them – so you will know just what to expect!

Plump and bright yellow-orange in colour, apricots from the Vinschgau Valley have an exceptional sweetness and an intense flavour. The climate in the valley is ideal for these delicate fruits and thus they are enjoyed throughout the region, whether fresh from the tree or in preserves, dumplings, cakes and other desserts.

The potatoes of the Puster Valley are equally well-known. These vegetables thrive in the harsher eastern areas of the region and are perfect for such dishes as “Herrengeröstel” or “Erdäpfelblattlan”.

There are in total 32 vehicles doing the rounds each day to supply the region with fresh milk from South Tyrolean mountain farms. GMO-free, high in quality and very full bodied, the milk is also made into tangy cheeses, fresh cream or delicious yogurts.
