Vitalpina recipe idea: vegan tartare

Try it for yourself: here is a Vitalpina suggestion for a quick and tasty vegan dish from the head chef at the Hotel Ansitz Golserhof:
Hotel Ansitz Golserhof****s

 Ingredients for 4 persons

  • 240 g seitan (wheat gluten), finely chopped
  • 10 g capers
  • 1 gherkin
  • ½ garlic clove
  • 1 tbsp tomato puree
  • ½ onion
  • 50 g ground almonds
  • 150 g tomatoes, dried
  • 20 g ground paprika
  • 1 tbsp mustard
  • Worcester sauce
  • Herb salt, pepper

Preparation:
Finely dice the capers, gherkin, garlic clove and dried tomatoes, then place in a dish. Add the remaining ingredients and mix well together. Add Worcester sauce, herb salt and pepper to taste. Form into an attractive shape and serve on fresh lettuce leaves. Toasted slices of bread and a slightly chilled South Tyrolean Vernatsch wine will also go well with this dish.
