Ingredients for 4 people:
- 125 ml milk
- 40 g butter
- 1 pinch of nutmeg
- 2 tbsp flour
- 300 g dumpling bread (stale bread cubes)
- 300 g nettles
- 1 onion
- 2 garlic cloves
- 4 free-range eggs
- Salt, pepper
Additionally:
- 40 g grated Parmesan
- 60 g browned butter
Preparation:
Moisten the dumpling bread with milk.
Wash the nettles, blanch them, squeeze out well, chop finely, and mix with the bread.
Finely chop the onion and garlic and sauté in butter, then add to the bread mixture along with the eggs. Season with salt, pepper, and nutmeg and knead the mixture well.
Finally, add the flour and shape the mixture into small dumplings.
Cook in salted water for about 10 minutes.
Sprinkle with Parmesan and serve with melted browned butter.
